I had a blasting talking with Judy Witts Francini and Giovanna Solimando about our favorite summer foods and memories of summers past

The discussion was wide ranging as we made our way through our favorite summer dishes, with a special emphasis on quick and easy no cook or low cook dishes, starting with tasty snacks and the ever-popular ‘apericena’ —an antipasto board so plentify it does double duty as supper.

Then we waded into our favorite ways to prepare summer veggies. For both Judy and I these are the backbone of our summer menus.

And while we noted that folks tend to eat less pasta in the summer, we touched on some lovely quick and simple summer pastas with low cook or no cook sauces. Then it was on to a quick recap of summer mains—and for me that means grilled foods— and, of course, seafood.
