Lolly and I had a blast cooking Milan’s signature dish, risotto alla milanese, together. She made it the old fashioned way, while I used a pressure cooker, a great method when you’re pressed for time. For demonstration purposes, we also mixed it up when it came to preparing the initial soffritto, types of broth for simmering the rice and the final mantecatura. And along the way we talked about how this dish was first invented, the best types of rice and saffron to use, and a whole bunch of other tips and tricks.
